  • 50 milliliters red wine (Mencia Rectoral de Amandi barrel) (DO Ribeira Sacra)
  • OR 50 ml of Albariño white wine (Gran Alanis) (DO Ribeiro)
  • 1/4 sweet onion or 1 shallot
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 30 grams Galician artisan butter (Campo capela or Airas moniz)
  • 2 tablespoons Alma Meiga olive oil
